Easy One Bowl Pumpkin Mini Muffins

Pumpkin recipes are popping up all over, and that’s a good thing! I love all things pumpkin and I have been bookmarking recipes to put me through Thanksgiving. I have stocked up on pumpkin puree and I am ready to go! I found this recipe for pumpkin bread on Amy’s blog, New Nostalgia. Hop on over and pay her a visit. As I was reading through the recipe, the fact that all this magic happens in one bowl in just a few minutes was perfect! See above? One bowl and I just pulled ingredients from the cupboard as I needed them and put them right back. No mess and no fuss at all.

Easy One Bowl Mini Muffins

1 ½ cup sugar
½ teaspoon cinnamon
½ teaspoon nutmeg
2 eggs
¼ teaspoon baking powder
1 2/3 cup flour
1 teaspoon baking soda
1/2  cup oil
¾ teaspoon salt
½ teaspoon cloves
1 cup pumpkin (about half a 15 oz can)
½ cup cold water
Mix all ingredients together until well combined.  Put in greased loaf pan or muffin tin.  Bake at 325 degrees.
  • Bread (one loaf) = 75-90 minutes
  • 12 Muffins = 45 minutes
  • 24 Mini muffins = 25 minutes – I checked my mini muffins at 22 minutes and they were done.

I cooked up two batches. On one of the batches I sprinkled  cinnamon and brown sugar crumble on top before baking. For the topping, I used 2 tablespoons brown sugar, 1/2 teaspoon cinnamon, and 3 tablespoons butter. I mixed it up with a pastry cutter, but a fork or your fingers will work just as well.

These muffins have just the right amount of pumpkin flavor and sweetness, but aren’t too sweet.  The nutmeg, cinnamon, and cloves give you that “Fall is here” feeling.  They are perfect with a hot cup of coffee in the morning or a glass of cold milk for an afternoon or late night snack.

The BEST Blueberry Muffins

On our Sunday trip to the grocery store  I picked up two pints of Blueberries. Gotta love Summer and the $1.50 per pint price! Blueberry Muffins were a must with these beauties so I went straight to Tasty Kitchen to look for a recipe. I came across a recipe that was titled “Best Blueberry Muffins Ever” With a title like that how could I resist? craftedmybones posted this recipe and turns out she also has a sweet blog called Vanilla & Lace. Thanks Abi for sharing this delicious recipe. They really are The Best Blueberry Muffins Ever!

Ingredients:

For the Muffins

1+1/2 cups All-purpose Flour

3/4 cup Sugar

1/2 teaspoon Salt

2 teaspoons Baking Powder

1/3 cup Vegetable Oil

1 whole Egg

1/3 cups Milk

1 cup Blueberries

For the Crumb Topping

1/2 cup Sugar

1/3 cup Flour

1/4  cup Butter

1 + 1/2 teaspoon Cinnamon

Preheat oven to 400 degrees. Grease muffin tin or use those nifty cupcake liners. – Combine flour, sugar, salt, and baking powder. Add vegetable oil into a one cup measuring cup, add the egg and the milk. It will look like this….


Pretty cool looking! Now take this egg, milk, oil mixture and add it to your flour mixture. Mix it up and fold in those blueberries! For the crumb topping, mix together the sugar, flour, butter and cinnamon. Mix with a fork and sprinkle over the muffins before you bake them. Bake for 20-25 minutes. I set my timer for 20 minutes and at that point they were browning so I pulled them out.  I set them out to cool for a few minutes then shared one with my husband. The BEST. We both agreed!
